PENCIANELLE WITH BEAN SAUCE

First course of the local tradition, proposed in the original recipe handed down by the housewives of Serra Sant’Abbondio, Pencianelle are a kind of maltagliati made with flour and water.

Impossible to snatch from the locals details on the recipe of this typicality. "Whoever guards the art of making them does not reveal the type of flour, nor their proportions. We only know that the flours in use are two and that when they are dry, for real, they sing." This is the little that is known about the secret recipe of Pencianelle. Tasting them will have to be enough to satisfy the palate and curiosity of the explorers of the Alte Marche. At the end of July an event is held in Serra Sant’Abbondio that celebrates the ancestral tradition of free rhyme, improvised, peasant and tavern: on this occasion it is possible to taste the unobtainable "Pencianelle", really spectacular with the bean sauce.
